An Adventure to Souffle Pancakes in Toronto

Now that I looked back to my Toronto trip, I noticed that I spent a lot of on Spadina Avenue and Kensington Market, which is just steps away. There are many independent cafes and shops here that  are yet to be explored. On my last day in Toronto, I decided to try Hanabusa Café, a cute, spacious café that specializes in soufflé pancakes. We also went to another popular soufflé pancake shop called Fuwa Fuwa on Bloor Street. Each has its specialty, so I’m excited to share my thoughts of these two cafes to you guys.

We first visited Fuwa Fuwa, which is on Bloor Street. It is less spacious than I expected, and I would recommend coming here with a smaller group of friends. Otherwise, you can actually call to make a reservation.

We ordered a classic Strawberry Soufflé Pancake and a Tiramisu Soufflé Pancake to share. As all pancakes are made to order, it takes 20-30 minutes to complete each order. And time passed by way faster when catching up with friends. Tiramisu Soufflé Pancake arrived fast. It comes with two fluffy, gigantic pieces of pancakes, covered with a thick cream and dusted with cocoa powder at the top. There is also a espresso-chocolate sauce on the side. The Strawberry Soufflé Pancake came shortly after, and it looks way simpler. It has a thick cream, with strawberries and strawberry sauce.

Both pancakes are eggy and fluffy, but I have tried airier souffle pancakes before in Hong Kong. I prefer the Tiramisu flavor more, especially with the espresso-chocolate sauce. The thick cream gives a nice, creamy texture to the fluffy pancakes. The Strawberry one was not bad, but it is not as special compared to the Tiramisu.

Few days later, I visited Hanabusa Cafe at Kensington Market. We ordered a Matcha Souffle Pancake to share. They also have more unique flavors, such as taro, earl grey & sea salt caramel, and a weekend special, jasmine tea. Compared to Fuwa Fuwa, this cafe is more spacious and instagrammable. You can take photos with friends, while waiting for the pancakes to arrive.

After 20 minutes or so, the souffle pancakes arrived. It is pricier than Fuwa Fuwa, but it comes in three pieces of pancakes. It is nicely presented, with the premium Kyoto matcha sauce on the side. The Matcha Souffle Pancake also has sweet azuki bean, strawberries and banana, and whipped cream. I poured all the matcha sauce on the pancakes, and damn they tastes amazing. They are airy, fluffy, and eggy. The matcha sauce has a subtle bitterness, with a strong, pungent matcha flavor. The addition of azuki red beans gives a good sweetness to it.

Overall Impression

After trying both Fuwa Fuwa and Hanabusa Cafe, I think I like Hanabusa Cafe more, because it is more spacious, with more unique selection on the menu. The souffle pancakes are overall fluffier, airier, and eggy-er. We both enjoyed the Matcha Souffle Pancakes so much, which we almost licked the plate! Though it is more expensive, I think it is a cute cafe to hang out with friends. Fuwa Fuwa‘s souffle pancakes aren’t bad, which they are still fluffy and jiggly. I just wish they are airier too. Otherwise, the Tiramisu flavor is stunning, especially for a Tiramisu lover, like me.
