  • 10 shrimps peeled and deveined
  • 1 green onion cut into thirds
  • 2-3 ginger slices
  • 1 tbsp cooking wine

Lemon Spicy Sauce

  • 1-2 garlic cloves minced
  • 1 tbsp minced cilantro
  • 1-2 chili pepper chopped
  • 4 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp fish sauce
  • ½ cup water
  • 1 lemon ½ for slices, ½ for juice

Instructions
 

  • Cook the soba noodles according to the package instructions. Once cooked, rinse them under cold water and set them aside.
  • Boil a pot of water. Add the green onion, ginger slices, and cooking wine. Cook the shrimps until they turn pink, which should take 2-3 minutes.
  • Remove the shrimp from the pot and transfer them to icy water to tenderize them.
  • In a separate bowl or airtight container, mix together the minced garlic, cilantro, chopped chili peppers, soy sauce, sesame oil, fish sauce, water, lemon slices, and lemon juice.
  • Add the cooked shrimps to the sauce mixture. Cover with plastic wrap or lid and put into the fridge for at least 5-10 minutes to marinate and allow the flavors to meld together.
