In a food processor, add shrimp, salt, black pepper, cornstarch, and egg white. Process until smooth. If you do not have a food processor, you can mince the shrimp into a paste and then mix in the seasoning.
Remove the crust from the bread and cut each slice diagonally into two triangles.
Evenly spread the shrimp paste on each triangle.
Prepare two shallow plates, one with beaten eggs and the other with breadcrumbs. Dip each triangle first in the egg wash and then coat with breadcrumbs.
In a deep fryer pot or large nonstick pan, heat ½ inch of oil until shimmering. Deep fry the triangles, shrimp-side down first, until golden brown (about 2-3 minutes). Then flip and fry the bread-side for about 1 minute.
Transfer the shrimp toast to a rack to drain and let it rest for 1 minute. Serve with your desired sauce.
