Crispy Shrimp Toast

Ingredients
  

Shrimp Paste

  • 300 g shrimp peeled and deveined
  • ½ egg white
  • 1 tsp salt
  • 2 tsp black pepper
  • 1 tsp corn starch

Other

  • 3 slices white bread
  • ½ cup breadcrumbs
  • 2 eggs beaten
  • Vegetable oil for frying

Instructions
 

  • In a food processor, add shrimp, salt, black pepper, cornstarch, and egg white. Process until smooth. If you do not have a food processor, you can mince the shrimp into a paste and then mix in the seasoning.
  • Remove the crust from the bread and cut each slice diagonally into two triangles.
  • Evenly spread the shrimp paste on each triangle.
  • Prepare two shallow plates, one with beaten eggs and the other with breadcrumbs. Dip each triangle first in the egg wash and then coat with breadcrumbs.
  • In a deep fryer pot or large nonstick pan, heat ½ inch of oil until shimmering. Deep fry the triangles, shrimp-side down first, until golden brown (about 2-3 minutes). Then flip and fry the bread-side for about 1 minute.
  • Transfer the shrimp toast to a rack to drain and let it rest for 1 minute. Serve with your desired sauce.
