This dish involves spreading a flavorful mixture of ground shrimp onto slices of white bread. You can choose to air-fry, pan-fry, or deep-fry them – today, we’ll go with deep-frying. Normally, I pair shrimp toast with Thai Sweet Chili Sauce, but since I was out of it at home, I used Kewpie Mayo with a sprinkle of paprika, and it turned out surprisingly delicious.

What Kind of Shrimps Should I Use?
The quality of shrimp is crucial in this recipe. Fresh shrimp is always preferable, providing a vibrant flavor and texture. However, fresh shrimp might not be available year-round. In such cases, frozen shrimp is a fantastic alternative. It’s more budget-friendly, readily available in local supermarkets, and easier to handle since they’re usually pre-peeled and deveined. Just make sure not to buy pre-cooked shrimp, as they won’t have the necessary stickiness when turned into a paste. For this recipe, I used frozen Raw Black Tiger Prawns (Medium) from Pricesmart, and they worked just as well as fresh shrimp.
Can I use Crusted White Bread?
You might wonder if you should remove the crust from the white bread. While it’s not necessary, be cautious when deep-frying if you choose to keep the crust. The crust can burn easily, affecting the overall flavor and texture. If you’re not removing the crust, consider pan-frying or air-frying to avoid this issue. If you’re concerned about wasting the bread crust, you can repurpose them into snacks or desserts.\
Crispy Shrimp Toast

Ingredients
Shrimp Paste
- 300 g shrimp peeled and deveined
- ½ egg white
- 1 tsp salt
- 2 tsp black pepper
- 1 tsp corn starch

- 3 slices white bread
- ½ cup breadcrumbs
- 2 eggs beaten
- Vegetable oil for frying
Instructions
- In a food processor, add shrimp, salt, black pepper, cornstarch, and egg white. Process until smooth. If you do not have a food processor, you can mince the shrimp into a paste and then mix in the seasoning.
- Remove the crust from the bread and cut each slice diagonally into two triangles.
- Evenly spread the shrimp paste on each triangle.
- Prepare two shallow plates, one with beaten eggs and the other with breadcrumbs. Dip each triangle first in the egg wash and then coat with breadcrumbs.
- In a deep fryer pot or large nonstick pan, heat ½ inch of oil until shimmering. Deep fry the triangles, shrimp-side down first, until golden brown (about 2-3 minutes). Then flip and fry the bread-side for about 1 minute.
- Transfer the shrimp toast to a rack to drain and let it rest for 1 minute. Serve with your desired sauce.
